How wheat it is
Demand for local organic food has inspired new interest in growing bread-quality wheat in New England. Regional farmers have long produced small grains for animal feed.

With a $1.3 million grant from the U.S. Department of Agriculture, Ellen Mallory of University of Maine Cooperative Extension is leading a group focused on building farmers’ capacity to produce high-quality organic bread wheat that meets the standards of local millers, bakers and, ultimately, consumers.
